(Olympia)—Christian Skillings, the owner of the Iron Rabbit Restaurant & Bar, will open a second restaurant in June 2020. The restaurant—named Cynara Restaurant & Lounge—will be located at 500 Columbia Street NW in downtown Olympia’s growing Market District.
Cynara (sī-nara) is the Greek word for artichoke. The restaurant will serve elevated Mediterranean and Pacific Rim cuisine in a casual yet refined setting. The menu will feature
regionally sourced seafood, produce and spirits—with a standout wine and cocktail list.
The lease was signed in November, and Cynara’s interior construction kicks off this winter. The restaurant is just blocks from Washington state’s second-largest farmers’ market.
“Olympia is a growing community of people who are always looking for new flavors and ways to come together. Cynara will be a place for locals and guests to gather and discover new favorite dishes that are part of our creative cuisine in the Pacific Northwest,” says Skillings.
